The accumulation of fat in the liver is a significant health problem that clogs liver function, setting the stage for diabetes and other issues. Of particular interest is the method the researchers used to induce the problem in the first place, which was placing the mice on a diet that restricted methionine and choline. Methionine is a vital sulfur-containing amino acid that drives liver metabolism. Choline is known as a lipotropic nutrient (meaning it helps fat flow from the liver – a fat solvent).
